The Holidays are always a busy time and that means you don’t always take care of yourself while taking care of family and friends. So we have 3 quick and easy recipes for a delicious and filling breakfast! These will keep you going throughout your last minute Holiday shopping and endless partying :)
1. Eggs and Vegetables, Fried in Coconut Oil
Another great use of coconut oil!!
Ingredients: Coconut oil, Carrots, Cauliflower, Broccoli, Green beans, Eggs, Spinach, Spices
Add coconut oil to frying pan and turn up the heat.
Add vegetables. In my case, I use a frozen mix so I need to let it thaw in the heat for a few minutes.
Add eggs (I use 3 or 4).
Add spices. I use a spice mix, although salt and pepper work great too.
(Optional) Add spinach.
Stir fry until ready.
2. Chia Seed Pudding
This recipe includes 1/4 cup of diced mango and pepita seeds, but feel free to top the pudding with your favorite fruit and nuts.
Ingredients: 1/4 cup chia seeds, 1 cup light or full-fat coconut milk, depending on preference, 1/2 tablespoon honey
Mix chia seeds, coconut milk, and honey together in a small bowl or glass mason jar. Let it set in refrigerator overnight.
Remove it from the fridge, and make sure your pudding looks thick and the chia seeds have gelled. Top with fresh fruit and nuts, and enjoy immediately.
3. B.E.A.T Salad
Ingredients: 1 ripe avocado, chopped into chunks, 2 boiled eggs, chopped into chunks, 1 medium-sized tomato, chopped into chunks, Juice from one lemon wedge, 2-4 cooked pieces of bacon, crumbled (optional), Salt and pepper to taste
Mix all ingredients together, stirring not too much, but just enough to make some of the avocado and egg into mush (I know doesnt SOUND great but sure tastes great!!)
